Instructions

1. SAFETY FIRST: Prepare your station on a heatproof surface, away from any flammable materials. Keep a fire extinguisher or wet towel within reach. This procedure is dangerous and requires extreme caution.
2. Boil water in a kettle. Pre-warm your two metal mixing mugs and the final serving glass by pouring some hot water into them, letting them sit for a moment, and then discarding the water.
3. In one of the warm mixing mugs, combine the cask-strength Scotch whisky and the sugar.
4. Add about half of the boiling water (30 ml / 1 oz) to the mug with the whisky. Using a long lighter, carefully set the surface of the liquid alight. It should catch with a blue flame.
5. Holding the mugs firmly by their handles, carefully pour the flaming liquid back and forth between the two mugs, creating an arc of fire. Repeat this 4-5 times to mix and slightly caramelize the sugar.
6. To extinguish the flame, place the empty mug over the top of the full one, cutting off the oxygen supply.
7. Pour the contents into your pre-warmed serving glass or mug. Top with the remaining boiling water and stir to ensure the sugar is fully dissolved.
8. Garnish by expressing the oils from a lemon peel over the drink's surface and dropping it in. Serve immediately while hot.
