- Persimmon Puree60 ml / 2 ozMade from 1 very ripe Fuyu or Hachiya persimmon, skin removed and blended until smooth.
- Sage Simple Syrup22.5 ml / 0.75 ozTo make, simmer 1/2 cup sugar, 1/2 cup water, and 5-6 fresh sage leaves for 5 minutes. Let cool and strain.
- Fresh Lemon Juice15 ml / 0.5 ozFreshly squeezed is essential for brightness.
- Sparkling Water90 ml / 3 ozChilled. Club soda or non-alcoholic sparkling wine can also be used.
Ice type
- Cubed ice for shaking, served neat (no ice).
Mixing equipments
- Cocktail shaker for chilling and combining ingredients.
- Strainer (Hawthorne or fine mesh) to pour without ice.
- Small saucepan to prepare the sage simple syrup.
