Pharisäer

The Pharisäer is a traditional hot drink from the North Frisia region of Germany. It consists of strong, hot coffee sweetened with sugar and generously spiked with dark rum. The defining feature is a thick cap of whipped cream floated on top, which serves to insulate the drink and trap the aroma of the alcohol. Traditionally, the drink should not be stirred, but rather sipped through the cool cream, creating a delightful contrast of temperatures and textures.

Backstory

Legend dates the Pharisäer to the 19th century on the island of Nordstrand in North Frisia. It was created for a christening ceremony hosted by a particularly strict pastor who preached against the evils of alcohol. To discreetly enjoy their spirits, the locals added rum to their coffee and hid the smell under a thick layer of whipped cream. When the pastor inevitably discovered the ruse, he exclaimed, "O, ihr Pharisäer!" ("Oh, you Pharisees!"), thus giving the drink its name.

  • Whisk or shaker for whipping cream
  • Spoon for pouring cream

Instructions

The process is simple: dissolve sugar in hot coffee within a pre-warmed glass, add rum, and then carefully float a layer of lightly whipped cream on top. The drink should be served hot and unstirred.
1. Prepare the cream by whipping it lightly until it thickens but is still pourable. Set aside.
2. Warm your Pharisäer or Irish coffee glass by filling it with hot water and then discarding the water.
3. Place two sugar cubes (or two teaspoons of sugar) into the bottom of the warmed glass.
4. Pour the hot, strong coffee over the sugar until the glass is about two-thirds full. Stir until the sugar is completely dissolved.
5. Add the dark rum to the coffee and sugar mixture.
6. Carefully float the lightly whipped cream on top of the coffee. You can do this by pouring it slowly over the back of a warm spoon.
7. Serve immediately. Do not stir; instruct the drinker to sip the hot coffee through the cool cream.

Garnishing

The drink is traditionally served without a garnish, letting the stark white cream be the visual focus. However, a light dusting of cocoa powder or fine chocolate shavings can be added for extra flavor and visual appeal.
  • Cocoa powder or chocolate shavings (optional)
